Romans
played a main role at the first, for the actual world wide
production of wine, and these
selected producers are among the best one in matter of quality of wine d.o.c.
& food in Italy, and where traditions are profound
from Marcus Aurelius when started to spread technique
of viticulture in northern territories of Roman Empire, to
be sure that the troops could have their supplying of wine.
Since then, the intensive viticulture has been in a constant
expanding processing among regions of Germany, Austria and
Bordeaux till Spain.
As
well Olives trees has been growing in the middle east since 8000
years ago, and the best areas in the word are recognized as
Mediterranean zones, where the olives grow with fruits of
excellent taste and quality results, and again Romans had main
role for spreading intensive cultivations in the best areas of
Roman Empire, especially South-Center of Italy where we find the
high quality of Extra Virgin Olives Oil.
Our
vineyards are situated on typically marly and argillaceous
land with a good percentage of iron, at an altitude of
300m a.s.l.. The local people call these “strong
lands”. All the grapes are harvested by hand, avoiding
bunches that are rotten or not yet ripe (in un-favourable
years the harvest has to be completed in several stages).
There are those who remain firmly convinced that white
wine should be drunk young. We continue to maintain, and
prove, that our wines are perfectly ready for consumption
after a few months in the bottles, and remain that way for
several years.
When you open a bottle of Gavi with a few years’ ageing
behind it, you will discover enjoyable sensations, because
the youthful edge has given way to a more mature and
complex range of aromas

Grappa
di Gavi
This grappa is distilled in a bain-marie in two
copper pot-stills on brick ovens, like those once
used in the cellars of castles and villas in our
area.
This slow, painstaking procedure is indispensbale
in order to obtain excellent quality.
Inside the stills, the pomace is enfolded in a
tepid cloak and gently swept with a breath of
stem, to free it of alcohol and prestigious
aromas.
